Simple Pan Grilled Figs
Wash and trim figs and slice in half vertically.
Heat a heavy skillet (we use a 10" cast iron one) on medium-high heat. When the pan is hot enough that a drop of water sizzles and dances on the surface, add one tablespoon butter. When the butter is melted, place the figs cut side down in the pan. Grill them until the cut surface is browned. Turn them over and grill the rounded side until the figs are softened and heated all the way through. Serve drizzled with balsamic vinegar for a side dish (nice with simple grilled meats and a salad), or place on individual plates, drizzle with balsamic, and add a small scoop of your favorite vanilla ice cream for an excellent dessert.
Figgy Piggies
Wash and trim figs. Partially slice each fig lengthwise. Don't go all the way through; you want to be able to open them up like a book. Inside of each fig, place a pecan half, a small piece of goat cheese (plain or honey) and a drop or two of balsamic glaze. Close them over the filling and wrap each fig in 1/4 - 1/3 slice of good applewood smoked bacon. Use a toothpick to close. You may then put these under the broiler, pan grill them, or put them over indirect heat over a slow charcoal fire. These are so good, you will want to eat them right away - but please let them cool a bit first! Perfect for a cocktail party with a glass of champagne!
